Q:  What do you think of Agave Nectar as a sweetener?

A:  The principal constituent of agave nectar from the agave plant is starch.  This then undergoes enzymatic and chemical conversions that refines and chemically alters it to make a highly refined form of fructose--very similar to high fructose corn syrup.  Sounds like high fructose agave nectar to me.
